Dinner features wines from Trentadue Winery

The Carson Nugget will host its monthly wine dinner at 5 p.m. Monday, Oct. 26 at the Steakhouse. The featured wines are from Trentadue Winery. Cost is $65 per person. For reservations, call 882-1626 ext. 209.

The five-course menu includes:

• Grilled Brazilian rock lobster tail with marinated pear puree, grilled orange segments, toasted hazelnuts, micro-mirepoix greens and pomegranate beurre blanc paired with Trentadue 2006 Dry Creek Valley sauvignon blanc;

• Pine nut and coriander encrusted rack of lamb with fresh morels and grilled portabellas, blackberries, molasses roasted acorn squash, pulled rhubarb "ribbons," cinnamon and cassis cream and aged balsamic, paired with 2005 Alexander Valley cabernet sauvignon;

• Pan-seared Idaho rainbow trout with pumpkin and spice risotto, sweet potato chips and cranberry compound butter paird with 2003 Alexander Valley La Storia petite syrah;

• Free-range pork tenderloin and caramelized apple compote, rosemary roasted bliss potatoes with prosciutto and amaretto maple "gastrique" paired with a 2004 Alexander Valley La Storia red wine;

• Finished up with a Chocolate Decadence Trilogy - miniature chocolate cheesecake with coffee graham crust and espresso cream; white chocolate mousse with fresh mint and candied basil; and semi-sweet chocolate custard with fresh cut fruit and cabernet "syrup, " paired with Chocolate Amore dessert wine.
