An information session on Red Meat Mobile Slaughter Units will be held from 9 a.m. to 3 p.m. Thursday at the University of Nevada Cooperative Extension, 2621 Northgate Lane, Suite 15, Carson City.
The information session is being presented by Food Safety and Inspection Service, USDA Rural Development and Farm Service Agency.
"This session is intended to education small producers and processors on establishing mobile slaughter units and how to ensure the safety of the products in order to receive the USDA federal mark of inspection" said Clint Koble, Farm Service Agency state executive director.
Mobile slaughter units are self-contained slaughter facilities that can travel from site to site. Typically the units provide slaughter services to regional small producers of cattle, hogs, goats and sheep at host farms. Food Safety and Inspection Service inspected mobile slaughter units provide a feasible option for small livestock producers wanting to provide safe, wholesome meat products to local and interstate consumer markets.
Chef Doug Taylor will present information on the Chef to Producer Program that highlights the connection between restaurants and locally grown food.
The information session will include a review of federal grant and loan options and how to apply for the federal grant of inspection and a discussion of inspection issues unique to mobile slaughter units.
