Watermelon is the quintessential summertime fruit. Nothing is quite like eating a fresh cold slice of watermelon on a hot summertime day.
The fresh crunch of the melon and the sweet watery texture is so refreshing. Watermelon is one of my favorite fruits and has been since I was a kid. I have loved plain watermelon on its own, but this recipe was an unexpected new-found love of mine and I wanted to share it with you all.
Lime, salt and watermelon sounds like the perfect summertime margarita — and it is, blend it all up and add your favorite rum or tequila and enjoy it.
But this salad was inspiration from another refreshing cocktail — a Mojito. The classic lime and mint flavors seemed to go just well with a slice of watermelon. So let’s combine them to get what is going to be a new summer time gathering side dish.
Watermelon Mojito Salad
1/2 watermelon, rind removed
1/2 lime, juiced
1 teaspoon honey
1/4 cup mint in ribbons
Kosher or Sea salt (about 1/4 teaspoon)
Instructions
Cut a watermelon into triangles.
Arrange in a salad bowl, so that all the watermelon is exposed so the ingredients in the next steps get all over the watermelon.
Squeeze the juice of one lime over all of the watermelon.
Drizzle with honey, sprinkle with salt and the mint.
