Brewery operations coming to Carson City’s Fox Brewpub

Fresh beer brewed on site will soon be available at The Fox Brewpub in downtown Carson City.

Jim Phalan, owner of the award-winning pub and restaurant, said plans are underway to build a brewery within the first floor of the St. Charles Hotel, the building that houses the eatery.

“We are currently in our 10th year of business, and to kick off the next 10 years, we wanted to add a complete brew house to our current operations,” Phalan said. “The brewery equipment has been ordered and should arrive sometime in August of this year. The system we purchased, is a 7bbl system, with a capacity of around a 1000 bbls a year (that’s 2,000 kegs).”

Phalan said the lot south of the restaurant has been remodeled to accommodate more parking and access to the new brewery operations.

Owners are hoping to have all permits and licenses finalized in late September, in time for serving up brews on Nevada Day.

The brewery will be built with expansion and distribution in mind, however, there are no current plans to distribute.

Additionally, the restaurant will be offering crowlers, 32-ounce cans of beer to go for those who would like to sample some of the craft beers on tap.

Out of the 17 draft beers currently installed at the pub, only six to eight will be dedicated to in-house flavors. Local favorites will continue to be on tap all year, Phalan said.

The 100-seat restaurant, at 310 S. Carson St., has an additional 70 seats on the patio. An eclectic pub-style menu includes award-winning sandwiches, salads, burgers, chicken wings, pizzas and vegetarian options in addition to pub favorites like Guinness steak and mushroom pie, fish and chips and specialty pot pies.

Open at 11 a.m. daily, the restaurant hosts beer-tasting events, dinners featuring special chef creations paired with custom beers, live entertainment and a happy hour weekdays.
