Another new restaurant is coming to Carson Mall this fall.
Bella Vita Bistro & Catering Company hopes to open its doors the first week in October at the back of the mall, off Stewart Street, in the space once occupied by Charley’s Grilled Subs.
“We’re super excited, but it’s bittersweet. But I believe when one door closes another one opens,” says owner Lori Baxter.
Baxter owns the Flight Restaurant and Bar on Meridian Boulevard near the Minden-Tahoe Airport, which will be closing Sept. 30.
Her landlord there recently passed away and his family has decided to turn the 7,000 square-foot space into a manufacturing warehouse.
“So it’s with a lot of sadness, too. We have wonderful friends and customers here,” said Baxter.
The details still are being finalized, but Baxter expects Bella Vita to be open seven days a week, with live music on Friday night and a brunch on Sunday.
“We’ll have a grab and go breakfast, fun lunch menu with homemade soups, sandwiches, salads, a fondue appetizer, a bar, a bistro-style menu for dinner with a few items,” said Baxter.
She is also continuing her catering business, which includes lunch delivery to offices in Carson City.
Baxter said her entire staff of 16 full-time and 15 part-time workers will be moving with her and she is looking for additional personnel because the new restaurant will be open more hours.
A couple other restaurants are planning openings at the mall sometime in October, too.
Chipotle Mexican Grill is moving into half the building recently constructed at the mall’s southwest corner at the intersection of Carson and Stewart streets and an undisclosed, independent eatery is going into the standalone building at the mall’s northwest corner where Tahoe Ridge Winery & Bistro formerly operated.
