Summer is here and it’s time to fire up the grill. This year why not mix up your usual menu and grill lamb chops?
We use this marinade at Js’ Old Town Bistro and our customers love it. It’s easy to make a home and is sure to be a crowd pleaser. This recipe is enough for 2- 3 racks.
We recommend cutting them into double bone chops.
2 tablespoons Dijon mustard
¼ cup honey
1 tablespoon thyme
2 teaspoons rosemary
1 tablespoons lemon zest
1 tablespoons lemon juice
1 tablespoons garlic
¼ cup olive oil
In a food processor combine the Dijon, honey, thyme, rosemary, lemon zest and juice, and garlic.
Process until well blended. Add oil and emulsify, it should be the consistency of a salad dressing.
Add marinade to your lamb chops, mix well, tightly cover and let them marinate over night. Fire up the grill and cook to medium rare to medium (125 to 130 degrees). Enjoy!
