Js’ Old Town Bistro’s key lime pie recipe.
Springtime calls for lighter and often fruitier desserts. This key lime pie is a crowd pleaser and will be a hit at your next gathering. Makes two pies.
3 Cups crushed graham crackers
10 tablespoons melted butter
½ cup sugar
¾ teaspoon salt
7 14 oz cans condensed milk
2 cups key lime juice
7 egg yolks
Preheat oven to 350 degrees.
Blend the graham crackers, sugar, salt and butter together in a food processor. Separate into 2 equal portions. Spray two 12-inch spring form pans with a non-stick cooking spray. Pack the crust mixture into the pans and bake for 15 minutes. Let cool. Lower the oven temperature to 275 degrees.
While the crusts are cooling make the filling. Mix together the milk, key lime juice and egg yolks.
Pour into the pie crusts.
Bake at 275 degrees for about 30 minutes or until set. Let cool. To serve top each slice with a dollop of whipped cream.
