Eve’s Eatery opens in downtown Carson City

Nestled on the corner of Carson and Telegraph streets, Eve’s Eatery is the newest place in town to get breakfast and lunch.
Owners Eve and Francisco Espinoza held their grand opening on Thursday, Jan. 13 but kept it quiet so that they would have extra time to train their staff.
“We’ve been waiting for this day for months now. … I’m excited, I’m tired. I don’t know which one is stronger,” Francisco joked during an in-person interview with the Appeal. “It’s definitely more excitement.”
He and Eve said that, between permitting and ordering supplies, it’s taken them half a year to get Eve’s Eatery up and running, but the wait has been well worth it.
They moved from Las Vegas to Carson City three years ago. Eve enrolled at WNC to take business training classes, while Francisco already had 15 years of experience in the restaurant industry.
Together, they’re a power team, and they’re toasting to a great new year (with a side of hash browns and eggs, of course).
Eve’s Eatery is located on 402 N. Carson St., and it’s open Wednesday through Sunday, 7 a.m. to 2 p.m.
