Tara Riddle: Stuffed croissant French toast (recipe)

Happy spring… and Happy Mother’s Day to all of you beautiful mothers out there who work so hard to keep it all together.

This stuffed croissant French toast recipe is for the perfect Mother’s Day brunch. This is a really super simple meal that allows for the whole family to get creative together. The little kids out there can have loads of fun helping make this breakfast.

We are going to slice our croissants in half and stuff them with jam, berries, and cream cheese. Then dip them in our French toast batter and pan fry them. We will top them with some powdered sugar and maple syrup. Then serve this to the whole family with a side of bacon, ham, or sausage… And of course, a mimosa.

The batter will be enough to dip about 6-8 croissants. You can double it if you need more, or half it, if you need less. The batter will keep in the fridge for up to seven days.


Ingredients


6-8 croissants

10 eggs

1/2 cup heavy cream

2 teaspoons vanilla

Raspberry jam

Whipped cream cheese

2 tablespoons cinnamon

Syrup

Powdered sugar for dusting


Directions


For the batter, you will start by cracking 10 eggs into a bowl big enough to put a croissant in. Add your heavy cream, vanilla, and cinnamon. Use a whisk and thoroughly whisk this mixture up until all of the egg yolks are popped and mixed into the heavy cream.

Next, you want to slice all of your croissants in half. Now for the fun part. This is when you and your kids and family can get very creative with this dish.

For my stuffing I used raspberry jam, cream cheese, and fresh raspberries. If you don’t like cream cheese, you can use goat cheese, peanut butter, Nutella… the options are endless.

I use whipped cream cheese because it is easier to spread.

I put a smear of cream cheese, then I put a heaping spoonful of raspberry jam and spread it out evenly across the bottom slice of my croissant. Then, I added about 6 fresh raspberries and put the top back on my croissant, like a sandwich. You’ll want to prepare all of your croissants before you dip them in the batter.

Next, get a skillet pan hot on the oven on medium heat. Make sure you spray it with nonstick spray. Put a small pad of butter in it. Now you can get your batter and take your stuffed croissants and roll them in the batter until all sides are evenly coated in the mixture.

Then pop it into the pan and let it cook. Usually just a few minutes on each side is all that it needs. Dust the finished product with a little powdered sugar and top with your favorite maple syrup and more fresh berries. Bon Appetit!

A really fun idea to get the whole family involved is to make a little station for stuffing the croissants. The whole family can get involved and everyone can pick and choose their own ingredients for the stuffing of the croissant.

It can be very fun for all. You can also do little-kid mimosas with sparkling water and orange juice and add berries to the kid drinks.
